Devil’s Food Cake with Chocolate Ganache
The Cake
Preheat oven to 375. Grease and flour your baking pan.
Sift together in large bowl:
2 C cake flour
2 C sugar
3/4 C baking cocoa
2 t baking soda
1 t salt
1 t baking powder
Combine in second bowl:
1 C olive oil
1 C milk
1 C room-temperature coffee
2 eggs
1 t vanilla extract
Add wet ingredients to dry, Stir gently until well-combined..
Pour into baking pan and bake until toothpick inserted into the center comes out clean. Cool and remove from baking pan.
The Ganache
When cake is out of pan, in a large heat-proof bowl, microwave:
1 C heavy cream
1 C quality chocolate chips or chunks
Stir to combine. When smooth and creamy, pour over cake.
