Spaghetti Carbonara

We recently discovered this easy delicious meal for which we almost always have all the ingredients on hand. It’s another one of our GoTo meals when we failed to plan or our day got complicated.


You want to time this such that your noodles and your bacon are done at about the same time.

Spaghetti Carbonara

Set a pot of salted water to boil and cook up 3/4 package of spaghetti.

Chop into small bits and cook in a very large pan:

1/2 package of bacon

While the water is boiling and the bacon is cooking, combine:

4 eggs

1./2 C shredded Parmesan

salt & pepper

Also prepare:

1/2 C chiffonade of basil

3/4 diced tomatoes

When your noodles are done, drain them, but save some of the water. Pop the hot noodles into the pan with the bacon. Stir well to cover each noodle with a bit of bacon grease.

Remove from heat and add the egg/cheese mixture. Stir well until the egg/cheese mixture coats all the noodles. If it looks a bit dry, add a wee bit of noodle cooking water.

Top with basil and tomatoes. Serve immediately.
